Memorial Day Yummy Stuff ~

All American White Chocolate Covered Strawberries

  • Be sure to clean your strawberries before dipping, and buy organic if you can afford to. Make sure your strawberries have dried completely so that the chocolate doesn’t seize up on you.
  • Put chunks of white chocolate in a small bowl (white chocolate candy wafers are easy to work with). Melt in the microwave at 30 second intervals, stirring in between until completely melted.
  • Fill a second small bowl halfway with blue sanding sugar.

  • Dip strawberry into chocolate, leaving about 1/3 of the strawberry uncovered.
  • Before the chocolate sets, dip the bottom third of the strawberry into the sanding sugar.
  • Place on waxed paper.

  • You can pop them in the refrigerator if you’re serving them later in the day, but don’t make these more than a day in advance.

Red, White & Blueberries

Red, White & Blueberries

  • 1/2 pound large strawberries, washed and cored
  • 1/4 pound washed blueberries
  • whipped cream (store-bought or homemade)

  1. Wash, hull, and core strawberries (a melon scoop works nicely). Make sure to find large strawberries to use to make it easier.
  2. Fill each strawberry with whipped cream (if homemade, pour whipped cream into a pastry bag).
  3. Top with washed blueberries and serve immediately.
  4. Tip: These are best served right away since the whipped cream will melt. If making for later, prepare fruit and then fill with whipped cream just before serving. You can try refrigerating these for a short time before serving to keep cool too.

Red, White & Blue Cupcakes

You can make these red, white, and blue cupcakes in two different ways. I like the layered look above the best. I love how the color seeps through the white cupcake liner, enticing you to peel off the cupcake wrapper. You can also make them by adding spoonfuls in three different sections of the cupcake liner.

1. Bake up your favorite white cupcake recipe. Divide batter into three bowls. Use blue and red gel food coloring in two of the bowls

2. For the layered cupcake, spread a tablespoon of one color of batter into the bottom of a cupcake liner. Add a second tablespoon in another color on top. Be careful when you spread it around so that the two colors don’t mix. Do the same with the final color. The other option is to place spoonfuls of batter into three different sections. Again, doing your best not to mix the colors.

3. Bake, cool, and decorate!

Just add Red, White & Blue sprinkles
